non ho ancora preparato i cuddureddi?? allora mi sono messa subito all'opera: detto fatto!&lt;br /&gt;I "cuddureddi" , sono dei dolcetti tipici che si preparano a carnevale, sono di una facilità estrema e di una bontà ineguagliabile: provateli!&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;Ingredienti:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1/2 lt di acqua&lt;br /&gt;250 gr di farina di grano duro&lt;br /&gt;la scorza di 1 limone&lt;br /&gt;1 cucchiaio di olio d'oliva&lt;br /&gt;1 cucchiaio colmo di zucchero&lt;br /&gt;zucchero e cannella per cospargerli&lt;br /&gt;olio di semi per friggerli&lt;br /&gt;&lt;br /&gt;&lt;span style="FONT-WEIGHT: bold"&gt;Procedimento:&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div style="TEXT-ALIGN: center"&gt;mettere in un tegamino l'acqua, la scorza del limone, lo zucchero e l'olio e portare quasi ad ebollizione; quando comincia a fare le bollicine, versate la farina lentamente continuando a mescolare per circa 2 minuti. (attenzione perchè la pasta si indurirà velocemente, quindi mescolate energicamente). Scolateli e poggiateli in della carta assorbente. Con le formine create tutti i biscotti che volete. Infornate a 160° per circa 15 minuti.&lt;br /&gt;Preparate la glassa con acqua e zucchero a velo. ( di solito il pan di spagna da farcire lo preparo sempre il giorno prima)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredienti per la crema ai pistacchi:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 lt di latte&lt;br /&gt;100 gr di amido&lt;br /&gt;4 cucchiai di zucchero&lt;br /&gt;2 tuorli&lt;br /&gt;1/2 vasetto di pasta di pistacchi&lt;br /&gt;&lt;br /&gt;Per la decorazione occorrono 100 gr di granella di pistacchi e un litro di panna fresca da montare&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Procedimento per la crema:&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;Sciogliere l'amido in un tegamino con il latte freddo, aggiungere lo zucchero e mettere a fuoco basso mescolando di continuo finchè non si addensa, fate raffreddare e quando è freddo e ben fermo, frullatelo nel mixer per 30 secondi e poi aggiungete il concentrato di pistacchi amalgamandolo alla crema con un cucchiaio di legno o con il frustino. Aggiungete il pesce spada tagliato a cubetti, aggiustate di sale, pepe e peperoncino e sfumate con il vino bianco. Aggiungete il pesto di pistacchi. A parte cucinate gli spaghetti al dente, scolateli e versateli nella padella. Amalgamare bene facendo attenzione a non smontare la panna. Prendete la forma per i plumcake e nel fondo versate l'altra metà della granella di mandorle, versate sopra il parfait e coprite con la pellicola. Mettete in freezer almeno 6 ore prima di servire. Una volta che il burro si è ammorbidito mettetelo in una ciotola e lavoratelo con un cucchiaio, aggiungete lo zucchero a velo finché non ottenete una consistenza a “pomata” ovvero molto morbida.&lt;br /&gt;&lt;br /&gt;Poi unite poco alla volta la vanillina, la farina setacciata e continuate aggiungendo uno alla volta gli albumi che non devono essere freddi ma a temperatura ambiente. Mescolate gli albumi uno alla volta amalgamandoli perfettamente&lt;br /&gt;Foderate una placca da forno con della carta forno prendete l'impasto con un mestolo e versatelo nella placca formando dei tondi. Ricordate che tra un impasto e l'altro ci deve essere un pò di distanza . Poi con l'aiuto di un coppapasta tagliatele tutte della stessa misura.&lt;br /&gt;Le lingue di gatto vanno infornate a forno preriscaldato a 200°. Per la cottura saranno sufficienti 7-8 minuti, fino a quando i loro bordi non cominceranno a essere dorati. Ungere una padella antiaderente larga circa 28cm, in modo da poter chiudere comodamente il fagottino una volta imbottito, scaldarla sul fuoco, versarvi un mestolo di pastella e ruotarla per distribuire il composto. Cuocere per 2- 3 minuti girandola a metà cottura.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Procedimento per il ragù:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;soffriggete leggermente lo spicchio di agli e la cipolla tagliata a rondelle in poco olio. Aggiungete i funghi lavati e tagliati a fettine, aggiustate di sale e pepe e fate cucinate per 10 minuti circa. Aggiungete il tritato di vitello sfumate con il vino e cucinate per almeno 15 minuti, mescolando di tanto intanto. Aggiungete la salsa di pomodoroo e lasciate cuocere fnchè non è ben ristretto.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Procedimento per il purè:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;pelate le patate mettetele in una pentola con acqua e sale e fatele bollire finchè non sono ben cotte. Intanto in una ciotola preparate i formaggi e il burro tagliati a cubetti. Appena le patate saranno pronte, scolatele e riducetele in purea con l'aiuto di un robot da cucina o con il passapomodoro. Ancora calde versatele nella ciotola con i formaggi, aggiungete il latte, il parmigiano e le uova e amalgamate tutto. Per rendere il purè della consistenza giusta regolatevi aggiungendo del latte.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Per la mise en place, prendete le crèpes adagiateli su un piatto, versate al centro il ragù e chiudetele a fagottini legandoli con un filo di erba cipollina. Nel piatto da portata versate un mestolo di purè e sopra poggiate il fagottino. Appena il vino sarà evaporato mettete l'arista e il fondo di cottura in una pirofila e cuocete in forno a 180° per circa 40 minuti. Tritate finemente le mandorle, i pistacchi e le erbe aromatiche con l'aiuto di un robot da cucina, unite il composto al pangrattato e amalgamate tutto con 3 cucchiai circa di olio. Togliere l'arista dal forno e rivestitela tutta con le fette di pancetta e spalmatela con il composto di pangrattato mandorle pistacchi ed erbe aromatiche. Continuate la cottura dell'arrosto ancora per 20 minuti circa. O, se il cliente lo preferisce, può fermarsi a servire in tavola."&lt;br /&gt;&lt;br /&gt;«Per una sera - continua Patrizia - chi ci chiama può godersi la propria casa, senza preoccuparsi di altro che di gustare i piatti che abbiamo preparato e dedicarsi in maniera completa ai propri ospiti».&lt;br /&gt;&lt;br /&gt;Il fenomeno del Personal Chef è molto trendy all'estero, soprattutto in Inghilterra e negli Stati Uniti ma sta entrando di prepotenza anche nel nostro territorio.&lt;br /&gt;&lt;br /&gt;E' un'idea che piace molto.&lt;br /&gt;&lt;br /&gt;"Ultimamente stiamo lavorando molto con i buffet "finger food", l' ultima tendenza nel settore gastronomico . Si tratta di cibo da mangiare con le mani. In molte culture il cibo si mangia con le mani e la sete di novità ha portato questa moda anche da noi". spiegano ancora Paolo e Patrizia.&lt;br /&gt;&lt;br /&gt;I finger food vengono serviti in piattini monouso, monoporzione con tanti piccoli bocconi dai sapori diversi. Un buffet di nuova generazione, molto scenico: tutti i piatti e i bicchieri sono disposti sulla plance creando un effetto scenografico di forte impatto.&lt;br /&gt;&lt;br /&gt;Da non sottovalutare anche l'aspetto pratico: una volta finita la cena, si butta via tutto.
